150g Fresh Pasta
Half Onion Diced
50g Leeks Sliced
Corndale Farm Chorizo
Broighter Gold Rapeseed Oil
Half a Red Pepper diced
2 Cloves Garlic
3 sprigs Fresh Thyme 50g White Wine
200ml Chicken Stock
Fresh Parsley or Basil
In a frying pan sweat the onion, garlic & Chorizo sausage for 2-3 minutes. Add fresh thyme followed by the diced red peppers & leeks.
Add a splash of white wine followed by chicken stock. Allow to reduce and simmering point for 2-3 minutes then add cream and fresh chopped parsley.
In a pot of boiling water cook tye pasta for 5 minutes Drain pasta and add to the frying pan and combine with the sauce. Serve with shavings of cheese and enjoy this piece of Pasta Heaven
Add some chicken together with the chorizo.
