Charcuterie & Home Curing Masterclass – Full Day Course (27th June 2020)
Ever wanted to make delicious cured meats at home? Well now you can. Learn the art of meat curing and charcuterie from multi award winning charcutier and founder of Corndale Farm, Alastair Crown
Come and spend the day at Corndale HQ and learn how to safely make products like Bacon, Salami, Chorizo, Coppa and Pancetta all from your own home.
This is the only course of its kind in Northern Ireland. This is a full day course running from 10am to 4.30pm.
What will we do??
You will be greeted at our production facility with fresh coffee and a bacon sandwhich to set you up for the day. We will then start on the fundamentals of charcuterie and meat curing. We will look at the different varieties of charcuterie, different meats, different animals and the science behind producing such products.
We will then get hands on. We will do some basic butchery. Breaking down a pig, The primal cuts and what to do with each.
We will teach you how to make bacon, salami and whole muscle products such as coppa / pancetta or lomo.
You will learn how to easily and safely produce these products at home and give you information on where to buy your kit.
After we have made our products, you will be treated to an array of our handmade award winning charcuterie. You will be able to sample all our products and enjoy them with a glass of wine (or soft drink) as we discuss any questions you may have.
You will leave with the products you made and a goodie bag of Corndale Treats.
